| Orange Cranberry Bread | ||||||||
| 3/4 | cup white flour | |||||||
| 3/4 | cup whole wheat flour | |||||||
| 1/4 | cup brown sugar twin (artificial sweetener) | |||||||
| 1/4 | cup sugar (In the future I will try All sugar twin) | |||||||
| 2 | tsp baking powder | |||||||
| 1/2 | tsp baking soda | |||||||
| 1/2 | tsp. Salt | |||||||
| 1 | tsp ground cinnamon | |||||||
| 2 | cups bran flakes | |||||||
| 1 | cup orange juice | |||||||
| 1 | egg white (I use Naturegg "Simply Egg Whites" they're fat & cholestral free) | |||||||
| 1/4 | cup unsweetened applesauce} | |||||||
| 1/4 | cup canola oil } | (in future I will try ALL applesauce, no oil | ||||||
| 1/2 | cup raisins | |||||||
| 1 | cup fresh or frozen cranberries | |||||||
| 1 | Tbsp grated orange rind | |||||||
| Preheat oven to 350 degrees f. | ||||||||
| In a large bowl, mix cereal & orange juice, let stand 2 minutes | ||||||||
| Add Egg and applesauce/oil. Beat Well | ||||||||
| Stir in cranberries, raisins & rind. | ||||||||
| Add all the dry ingredients and stir until just combined. | ||||||||
| Spray a loaf pan with pam and then lightly wipe out/spread with a paper towel | ||||||||
| Pour batter into pan and bake for 55 minutes or until golden brown and a toothpick | ||||||||
| comes out clean & dry. | ||||||||
| Cool 10 minutes before removing from pan. | ||||||||
| Cool completely before slicing. | ||||||||
| Store tightly wrapped in the refrigerator. | ||||||||
| This freezes well. | ||||||||
