tsp ground cinnamon |

cups bran flakes |

cup orange juice |

egg white (I use Naturegg
"Simply Egg Whites" they're fat & cholestral free) |

cup unsweetened applesauce} |

cup canola oil } |
(in future I will try ALL
applesauce, no oil |

cup raisins |

cup fresh or frozen cranberries |

Tbsp grated orange rind |
|

|
Preheat oven to 350 degrees f. |
|
|
|
In a large bowl, mix cereal &
orange juice, let stand 2 minutes |
|
|
|
Add Egg and applesauce/oil. Beat
Well |
|
|
|
Stir in cranberries, raisins &
rind. |
|
|
|
Add all the dry ingredients and stir
until just combined. |
|
|
|
Spray a loaf pan with pam and then
lightly wipe out/spread with a paper towel |
|
|
Pour
batter into pan and bake for 55 minutes or until golden brown and a toothpick |
|
comes out clean & dry. |
|
|
|
Cool 10 minutes before removing from
pan. |
|
|
|
Cool completely before slicing. |
|
|
|
Store tightly wrapped in the
refrigerator. |
|
|
|
This freezes well. |
|
|
|
|
|
