| FAT FREE, Converted by substituting applesauce for the bacon fat | ||||||||
| Oatmeal Cookies (Dot's Grandma Lohr) | ||||||||
| 3 | cups oatmeal (Large flake prefered) | |||||||
| 1 | full cup B sugar (I used 1/2 sugar twin, could try more) | |||||||
| 1 1/2 | cups flour, (I use a mix of white and whole wheat) | |||||||
| 1/4 | tsp. Salt | |||||||
| 1 | tsp. Soda dissolved in 1/2 cup sour milk, (or sour cream) | |||||||
| 2/3 | cup unsweetened applesauce (original called for bacon fat) | |||||||
| Preheat oven to 400 degrees f. | ||||||||
| Cream | ||||||||
| In a large bowl, cream together the applesauce & sugar | ||||||||
| Then mix in the rest. | ||||||||
| Roll out with a rolling pin on a well floured surface to 1/4 to 1/2 inch thick. | ||||||||
| Cut out rounds with an inverted water glass. | ||||||||
| Bake on cookie sheets lined with parchment paper for 20 to 30 minutes | ||||||||
| or until golden brown | ||||||||
| Serve plain or with apple butter, or put together with date filling. | ||||||||
| Store in cookie tin with a tight fitting lid. (For a few days) | ||||||||
| or freeze some. | ||||||||
| Alternatives: | ||||||||
| Could substitute some rolled rye for some of the oatmeal. | ||||||||
| Could add some oat bran to the flour mixture and add a little more liquid. | ||||||||
| Could use some apple juice as part of the liquid for a more appley flavour. | ||||||||
| Could try mixing in small amounts of Molly McButter for more flavour | ||||||||
