| 1/3 | Cup shortening | |||||
| 3/4 | Cup white sugar | |||||
| 2 | Eggs, beaten | |||||
| 1 1/2 | Cups all purpose flour | |||||
| 1 1/2 | Tsp baking powder | |||||
| 1/4 | Tsp salt | |||||
| 1/2 | Cup milk | |||||
| Grated rind of 1 lemon | ||||||
| (Pecans optional) | ||||||
| Mix shortening & sugar, add eggs and mix well. | ||||||
| Add baking powder & salt to flour and | ||||||
| add alternately to mixture with milk. | ||||||
| Add grated rind of lemon. | ||||||
| Mix and put into loaf pan. | ||||||
| Bake 45 to 50 minutes in 350 degree F oven. | ||||||
| Glaze; Squeeze lemon and add to 1/4 cup sugar. Let dissolve. | ||||||
| Take loaf out of oven, poke holes and spoon glaze over. | ||||||
