Cup Cornmeal |

cup whole wheat flour (I use about
1/2 white flour) |

TB baking powder |
|
|
1 to 3 |
TB
sugar depending upon taste. (I find it too sweet and use 1 TB brown sugar
twin) |

tsp. Salt |

1/3 |
cup, Plus about 2 TB of prepared
unsweetened applesauce |

3/4 |
cup skim milk (could use 1% or Soy
Milk) |

Egg whites (I use Naturegg
"Simply Egg Whites" they're fat & cholestral free) |

15 oz can of creamed corn |

|
|
Preheat
oven to 425 degrees f. Spray an 9 x 9 pan with pam and then lightly wipe out |
|
with a
paper towel. |
|
|
|
Mix
all ingrediants, pour batter into pan and bake for 30 - 35 minutes till a
toothpick |
|
comes out clean & dry |
|
|
|
|
|
|
Cool & cut into square bars that
are about twice as long as thick or wide. |
|
|
|
|
|
To
serve I always toast all sides of the bars in a toaster oven. This gives a
wonderful |
|
toasty coating that definitely adds
to the flavour |
|
|
|
|
|
|
Freeze
very well. I wrap up two bars per person in saran wrap and thaw and toast as
required |
|
|
|
|
Great
accompanyment with stir frys, baked beans or any casserole in place of bread
or rolls |
|
