| FAT FREE, Converted by substituting applesauce for vegetable oil | ||||||||
| Amazing Corn Bread | ||||||||
| 1 | Cup Cornmeal | |||||||
| 1/2 | cup whole wheat flour (I use about 1/2 white flour) | |||||||
| 1 | TB baking powder | |||||||
| 1 to 3 | TB sugar depending upon taste. (I find it too sweet and use 1 TB brown sugar twin) | |||||||
| 1/2 | tsp. Salt | |||||||
| 1/3 | cup, Plus about 2 TB of prepared unsweetened applesauce | |||||||
| 3/4 | cup skim milk (could use 1% or Soy Milk) | |||||||
| 2 | Egg whites (I use Naturegg "Simply Egg Whites" they're fat & cholestral free) | |||||||
| 1 | 15 oz can of creamed corn | |||||||
| Preheat oven to 425 degrees f. Spray an 9 x 9 pan with pam and then lightly wipe out | ||||||||
| with a paper towel. | ||||||||
| Mix all ingrediants, pour batter into pan and bake for 30 - 35 minutes till a toothpick | ||||||||
| comes out clean & dry | ||||||||
| Cool & cut into square bars that are about twice as long as thick or wide. | ||||||||
| To serve I always toast all sides of the bars in a toaster oven. This gives a wonderful | ||||||||
| toasty coating that definitely adds to the flavour | ||||||||
| Freeze very well. I wrap up two bars per person in saran wrap and thaw and toast as required | ||||||||
| Great accompanyment with stir frys, baked beans or any casserole in place of bread or rolls | ||||||||
